miss muffet

This afternoon I made curds and whey.  It was surprisingly easy, and it turned out well.  I am planning to use some of the curds as ricotta cheese in lazagna this week, and I am going to make mysost (sometimes called gjetost) out of the left over whey.  Don’t ask me how to pronounce those though!  Mysost is whey cheese, and it’s supposed to be pretty good.  I’m trying to learn to use everything I have, and I hated to waste almost a gallon of whey.  I was glad to find a recipe that uses it!  I’ll let you know how it turns out.
